CaliPaso Chardonnay is a drink-all-day Chardonnay. Fresh pear,
citrus notes, and soft acidity allow for this wine to be readily
enjoyed for any occasion.
winemaker's insight
The CaliPaso Chardonnay is made in a classic Old World style.
The grapes are hand-harvested from local Paso Robles vineyards
and then whole-cluster pressed to retain the maximum varietal
characteristics. After cold settling, the clean juice is racked into a
combination of neutral French oak barrels and stainless steel and
cool fermented —less than 60 degrees—to keep the beautiful
fruitiness. After fermentation, the wine is aged sur lies (on the
yeast) for seven months to add to its complexity.
