MONOPOLE PINOT NOIR
gourmet pairings
Serve with wild salmon
with sautéed chanterelle
mushrooms and kale.
The Estate Pinot Noir has
layered herbal complexity
that is highlighted by the
mushrooms and the finesse to
complement the salmon.
tasting notes
This wine shows with fruit on the nose, such as fresh bing
cherries and wild strawberries followed by floral violet notes. On
the palate, the balanced acidity shines with notes of caramel-
wrapped cherry mingling with earthy notes of cigar box,
sandalwood, and French vanilla which balances the fruit and
adds to its layered complexity. The round mouth feel with subtle
tannin leads to a prolonged peacock-tail finish, reminiscent of
Nuits-Saint- George and Vosne-Romanée vineyards.
winemaker's insight
This wine is crafted in much the same tried-and-true methods
each year, such that each vintage truly represents the vineyard as
it evolves and changes with minimal intervention. The winemaker
does not fine, filter, nor acidulate the wines. Fruit exclusively
sourced from the estate vineyard in the breezy, cool Templeton
Gap. Fruit is hand harvested, de-stemmed, and pressed.
