Signature Wines and Wineries of Coastal California
PHIL-OSOPHY, VINTNER SELECT
gourmet pairings
Pair with braised beef short
ribs, fork-tender and served
with low country grits, fried
carrots, and a smoked
molasses glaze.
tasting notes
This "phil-osophy" is one of three signature blends. It first
exhibits bright ruby red color with opaque density, then leads
to a wonderful array of aromas. Complex and concentrated, the
blend displays aromas of sweet black current jam, with hints
of black cherry, smoke, and flowers. Aged in French oak for 32
months, this structured, full-bodied, and opulently textured wine,
is thick, rich, and youthful.
winemaker's insight
For this wine, Phil decided to move toward a more traditional
California Bordeaux blend. Cabernet Sauvignon is the dominant
grape while the other varietals play a supporting role. In fact the
Cabernet used in this blend was awarded best of class in a San
Francisco Chronicle Wine Competition.
