The black-labeled flagship Reserve Pinot Noir is a special wine.
Tim Slater typically makes less than 200 cases of this beauty in a
vintage. The Santa Clara Valley is a storied winegrowing district,
stretching back to the early 1850s, perhaps best known for
"bigger" reds. But Sarah's Vineyard's location in the appellation
is a unique one. A gap in the Mt. Madonna foothills funnels
breezes and evening fog directly into the S.V. vines, providing
superior climatic conditions for growing superb Pinot Noir.
winemaker's insight
"We gently destem whole berries into small fermenters, cold
soak for three days, allowing a robust native fermentation, then
inoculate with RC212 yeast to ensure complete fermentation.
We hand-punch down three times daily. The wine is pressed off
the skins when the RS is below 20 grams of sugar per liter, and
fermentation is completed in barrel. The wine is bottled and
labeled with a hand-waxed capsule; it is allowed a year of bottle
age prior to release."

APPELLATION: Santa Clara Valley
COMPOSITION: 100% Pinot Noir, primarily Dijon clones 667 and 777
from our Dwarf Oak blocks.
MATURATION: The cooperage used is typically François Frères and
Vallaurine, 33 percent new oak with the balance in one- and two-year
old barrels. Barrel maturation is approximately 18 months.
CELLARING: Drinks well upon release; will reward proper cellaring for
10 years from vintage date.
