The Calipaso Estate Cabernet is a supple yet substantial wine.
winemaker's insight
The CaliPaso Estate Cabernet Sauvignon is produced from one
of the oldest plantings of the variety in Paso Robles. The grapes
are sourced from the CaliPaso estate's nearly 40-year-old vines
that produce small yields of flavorful fruit. All of the hand-picked
grapes are gently destemmed and fermented in stainless steel
tanks. For extraction, the tanks are pumped over twice daily and
pressed off when dry.

MATURATION: The new wine is aged for approximately 18 months in a
