J. WILKES PASO ROBLES HIGHLANDS
DISTRICT CABERNET SAUVIGNON
gourmet pairings
Try a dry-rubbed Moroccan-
spiced Colorado Rack of Lamb
with a side of two-year aged
Vella Jack potatoes au gratin.
Or serve with a nice pile of
Israeli couscous with hints of
cumin and mint.
tasting notes
Aromatics include black plum, currant, cassis, ripe black cherry
with hints of cocoa nibs, toffee, and cedar. The flavor profile is
fruity, juicy, and ripe on the attack—medium body with a rare
combination of dense, delicious fruit notes and also a sense of
balance and elegance. The long finish is bright and fruity with
dust minerality.
winemaker's insight
Picked to show richness, ripeness, depth, and complexity,
this wine is under 14 percent alcohol, which is quite a feat for
modern Paso Robles red wine. Plummy, red and black berry fruits
dominate with strong hints of black cherry and cassis. The wine
was fermented on the skins for almost three weeks at a cooler
temperature to maintain fresh, aromatic, primary fruit character
and an impressive mid-palate and long finish.
