CHOSEN ONE
gourmet pairings
The big, bold flavors of this
blend lend themselves to
being paired with hearty,
robust food. Take a look at the
winery website for a Sicilian
Sausage Soup that goes
wonderfully with this wine.
Hearty Bolognese sauce over
al dente pasta, or chicken marsala will also pair well.
tasting notes
This blend of 50 percent Grenache, 33 percent Mourvèdre, and
17 percent Syrah is quite a delicious and full package. The nose
is pretty yet also dense and brawny, with aromas of baked black
plum, wild blackberry, leather, sagebrush, and lightly roasted
coffee. There is lots of chalky texture on the palate and a pointed
acidity, presenting exotic flavors of plum, mulberry, pepper spice
and a touch of nutmeg
winemaker's insight
The Syrah (trellised) is from the Willow Creek District, the
Mourvedre (trellised), and Grenache (head-trained) are grown in
the Templeton Gap, which is the highest elevation in the gap.
Moist sea breezes help cool the mornings and evenings. All three
varietals were brought in at dawn; most bins are cold-soaked
to achieve optimal extraction of color. The wine is fermented
in small-lot open bins, receiving several daily punchdowns
throughout fermentation.show through.
