The Villa San-Juliette Rosé
is pleasantly peach-hued
with corresponding stone
fruit character. With poached apple, apricot, and tuberose
on the nose, this wine boosts aromas of spring essence. With
aeration, the aromas expand to strawberry cream and raw
honey. The palate is equally complex and evolving, with flavors
of pear, grapefruit, and ripe nectarine that segue into a crisp,
mouthwatering finish.
winemaker's insight
The Rosé starts in the vineyard where select rows of red varieties
are chosen for early harvest. The grapes are hand-picked then
destemmed to press where the juice is held with the skins for
two to three hours. After a pale pink color is reached, the fruit
is lightly pressed to stainless steel to begin a cold fermentation,
which ensures that desirable aromatics are maintained. The
fermentation is followed by six months of aging in neutral French
oak to soften the acidity and boost creaminess via lees stirring.
