Aromas of black cherry, anise, and cigar box intermingle with rhubarb, nutmeg, and cedar notes. This ripe, full-bodied wine offers layers of luscious earthy flavors and spiciness. Firm tannins are lifted by a vibrant acidity that augments the wine's long, vanilla bean finish. winemaker's insight The Cabernet Sauvignon is field blended between clones 4 and 169 during a hand-pick harvest, before it is hand sorted and destemmed to small-lot stainless steel and concrete vessels. A four to five-day cold soak takes place for optimum color and flavor concentration before fermentation. Post ferment, the wine sits on skins for extended maceration between 20 and 40 days to ensure ideal structure before pressing.
