Beautifully refined tannins accent an elegant structure and a long, distinguished finish. winemaker's insight The Cabernet Sauvignon lots were all hand sorted then destemmed and cold soaked for three days. The grapes were then fermented in closed-top fermenters and pumped over twice a day. The wine was then pressed off the skins and racked to French barrels—30 percent new oak.
