Pair with the Talking Bull almost
any meat or game. The winery
team's particular favorite is an
oak-smoked Muscovy duck
with black currant and thyme
coulis. A close second would
be a seared rib-eye with
Roquefort compound butter.
tasting notes
Ink-black in color, the Talking Bull showcases black cherry, plum,
black tea, and pie spice in the nose. The flavors mirror the nose
and, while many Petite Sirahs are pure drying tannin in the
mouth, the Talking Bull reveals bold tannins but is balanced by
excellent acidity and a long, lingering finish.
winemaker's insight
This flagship wine comes from a one-acre, head-trained vineyard
that produces a mere two-and-a-half tons of grapes every year.
Petite Sirah is a variety that grows exceptionally well in Livermore
Valley and this particular vineyard produces some of the best fruit
in the area. Mimicking the personality of Jay, the owner of this
vineyard, the Talking Bull is the perfect mixture of confidence,
eloquence, charm, and elegance in the glass.
APPELLATION: Livermore Valley
COMPOSITION: 100% Petite Sirah
MATURATION: Aged 33-35 months in French oak barrels.
CELLARING: Beautifully open and balanced upon release, this wine has
the structure to age well for 20 years or more.
