For an even more satisfying experience, add a sauce made with dried cherries. tasting notes This garnet Cabernet Sauvignon has an aroma of cassis, blueberry, cedar, and anise, with hints of black olives and juniper berry. It is full-bodied with licorice notes, chewy and chalky tannins. The fruit for this wine was selected from two of the estate vineyards in Paso Robles—Huerhuero and Creston Valley. Both produce Cabernet Sauvignon with an overall balance of expressive flavors and structure. winemaker's insight All the blocks were handpicked and sorted in the early morning to ensure quality and uniformity of ripeness. Then the fruit was destemmed and gently crushed into temperature-controlled stainless-steel tanks. Pump-overs took place regularly to enhance color and help extract tannins from the skin.
