125 CABERNET SAUVIGNON gourmet pairings The cassis and blueberry flavors in the Vina Robles Cabernet Sauvignon lend themselves beautifully to a grilled, smoky steak. For an even more satisfying experience, add a sauce made with dried cherries. tasting notes This garnet Cabernet Sauvignon has an aroma of cassis, blueberry, cedar, and anise, with hints of black olives and juniper berry. It is full-bodied with licorice notes, chewy and chalky tannins. The fruit for this wine was selected from two of the estate vineyards in Paso Robles—Huerhuero and Creston Valley. Both produce Cabernet Sauvignon with an overall balance of expressive flavors and structure. winemaker's insight All the blocks were handpicked and sorted in the early morning to ensure quality and uniformity of ripeness. Then the fruit was destemmed and gently crushed into temperature-controlled stainless-steel tanks. Pump-overs took place regularly to enhance color and help extract tannins from the skin. After pressing, the wine was racked into barrels to complete malolactic fermentation. awarDs & DistinCtions 95 points, Gold Medal, Best of Class – Los Angeles International Wine Competition 92 points – Editors' Choice, Wine Enthusiast Magazine 91 points – Tasting Panel Double Gold, Central Coast Wine Competition APPELLATION: Paso Robles COMPOSITION: 84% Cabernet Sauvignon, 16% Petit Verdot MATURATION: The wine is aged 20 months in French, Hungarian, and American oak barrels.
