winemaker's insight
The Malbec grapes are grown near the resort in Paso Robles.
Although Malbec is not an overly common varietal in Paso
Robles, proprietor Douglas Ayres found that the Allegretto
Resort property took naturally to the vines and produced
complex fruit. After the grapes are harvested and destemmed,
they are then set to ferment in small open-top containers. The
pressed, fermented juice is moved to a combination of American
oak and neutral French oak barrels to age for three years.
APPELLATION: Paso Robles
COMPOSITION: 100% Malbec
MATURATION: Aged 36 months in 50 percent new American oak and
50 percent neutral French oak.
CELLARING: This Malbec can be enjoyed now, yet will continue to age
beautifully for an additional five to 10 years.
