This recipe definitely takes a classic comfort food up a notch! We've served this in individual ramekins for parties or in a
casserole for buffets.
Lobster Mac N' Cheese
yield: 8 - 10 servings
16 ounces elbow macaroni
4 cups milk
4 sticks butter
½ cup flour
2 ½ cups parmesan, grated
2 cups sharp white cheddar
16 ounces lobster meat, cooked and diced
salt and pepper
1 tablespoon lobster base (optional)
Preheat oven to 350 degrees. Grease a 9x13
casserole dish with butter. Cook pasta according
to directions on package. Drain well. Heat milk
in a saucepan. Heat butter until melted and add
flour. Whisk for 2 minutes and slowly add to milk,
stirring constantly until smooth. Add parmesan
and cheddar to sauce. Stir until smooth. Add salt
and pepper to taste. Add cooked lobster meat and
combine with pasta. Pour into a 13x9 casserole
dish.
2 cups panko breadcrumbs
½ cup parmesan, grated
¼ cup butter, melted
Topping
Combine panko, parmesan, and butter. Sprinkle
evenly over macaroni and lobster mixture.
Bake at 350 degrees for 25-30 minutes or until
golden brown.
