Add butter and pulse until mixture resembles coarse meal. Add parmesan and pulse until combined. Add 1 tablespoon of sour cream at a time, pulsing each time to combine. Process until dough comes together and is well combined. Transfer dough to a clean work surface and shape into a 2-inch-wide log. Wrap log with plastic wrap and refrigerate for at least 24 hours. Heat oven to 325 degrees. Slice well-chilled log into ¼-inch-thick slices. Bake immediately until crackers are golden brown and firm in the center, 25-30 minutes. Transfer to a rack to cool. 1 ½ cups flour 2 teaspoons salt pinch white pepper 4 teaspoons rosemary, chopped 2 ounces butter 2 cups parmesan 1 / 3 cup sour cream yield: 20 pieces Parmesan Rosemary Icebox Crackers This is a labor of love but so good.
