Bacon-wrapped Chicken
yield: 8 servings
8 boneless chicken breasts
12-16 slices applewood-smoked bacon
salt and pepper to taste
Trim any fat off the chicken breast and season
with the salt and pepper. Lay out a slice of bacon
and wrap around the chicken breast. You may
have to use more than one slice of bacon to wrap
the breast. Use toothpicks to keep the bacon in
place. Place the wrapped chicken on a sheet pan
with space between them. Preheat oven to 400
degrees. Cook the chicken for 7 minutes then
turn the oven down to 350 degrees and cook
an additional 10-15 minutes or until the bacon is
done and the internal temperature of the chicken
reaches 160 degrees.
Of course, everything's better with bacon! I like the applewood-
smoked bacon for the flavor plus it keeps the chicken breast
moist. This recipe will also work well with boneless thighs.
