For special allergy considerations, use finely chopped parsley
instead of nuts. I love this presentation adapted from Martha
Stewart. It makes simple tea sandwiches so much lovelier.
Encrusted Tea Sandwiches
yield: 32 pieces
4 cups almonds, sliced and toasted
1 cup mayonnaise
2 cups parsley, chopped
½ cup honey
Honey Mustard and Pecan Chicken Salad (page 99)
Pimento Cheese (page144)
2 loaves of bread, white or wheat
Spread Chicken Salad on 4 pieces of bread and
top with another piece of bread. Spread Pimento
Cheese on 4 pieces of bread and top with another
piece of bread. Cut crusts off sandwiches. Cut
each whole sandwich into four triangle pieces. In
a bowl, combine mayo and honey and mix well.
Chop or crush the toasted almonds slightly. Spread
mayo mixture on the outside of the sandwiches
and dip in the crushed almonds or chopped
parsley as shown on left. Serve chilled.
