Serving Options Galore
I like to serve pasta parties family-style with
bowls placed directly on the table for a group
of 6-8. If you're entertaining a crowd, set up
a pasta bar—as many kinds of pasta, sauces,
and toppings as you'd like. Keep your sauces
warm in a crock pot or chafer. Cook the pasta
al dente, then drain it and add a tablespoon
of olive oil to keep it from sticking. Toppings
can include Italian sausage, meatballs, roasted
vegetables, chicken, or shrimp. Add a green
salad of arugula and serve it with a bottle each
of extra-virgin olive oil and aged balsamic. And,
of course, lots of freshly grated parmesan!
Complement the display with whole vegeta-
bles like eggplant, zucchini, artichokes, and tons
of tomatoes for great color and texture. A fun
desert is chocolate fettucini with fresh raspber-
ries and whipped cream.
