Crème Anglaise
2 cups half-and-half
½ cup sugar
1 vanilla bean
4 egg yolks
In heavy sauce pot, mix cream and sugar. Split
and scrape vanilla bean and add to mix. Lightly
beat eggs until smooth. Bring cream mix to a
strong boil and temper into yolks. Place in ice
bath and stir to chill. Do not stir with whip. Pass
through fine strainer.
This classic sauce is a complement to so many desserts. It can
dress up a basic pound cake topped with fruit or serve as the
filling or topping of a dessert roulade.

Moscow Mule Drink
1 ½ ounces vodka
¾ ounces fresh lime juice
3 ounces ginger beer
lime wheel
Fill glass with ice, add all ingredients, and garnish
with a lime wheel.
This is traditionally served in a Moscow Mule copper mug.
We've had more and more grooms request this as their
signature drink at weddings. The copper cups make a
wonderful groomsman's gift.
