You get a really great flavor fusion when you combine the
best of Mediterranean, Greek, Italian, Lebanese, and other
types of fare from the region. It's food that everybody
loves and the dishes are great for nibbling and grazing. Our
tablescape concept works really well here. Think lavish buffet,
a giant antipasto station, a mezze or nosh table. It's like being
at a market and getting to sample everything in sight. Simple
things like hummus dips, cheeses, olives, raw and grilled
veggies, breads, crackers, and cured meats can be paired
with prepared dishes like crostinis, mini muffulettas, pita
sandwiches, chicken skewers, mini meatballs, and whatever
else sounds tasty. Most of this can be made ahead of time,
which is super convenient, and you can just fill the table up,
plan on a few quick replenishes, and it'll last all night. It's a
great way to keep a large crowd happy—we've done it for
500—and of course small crowds love it, too. This is healthy
food, so you feel good when you're enjoying it. You can easily
go 100-percent vegetarian or add in some meats as desired.
