Cabernet Sauvignon grapes were sourced from the original
Tapteil Vineyard block planted in 1985. The wine exhibits
nuances of dusty spice, dark cherry, and currant with cocoa
powder and plum. Tannins are fine-grained and firm. The Tapteil
Cabernet Sauvignon is powerful and full-bodied with ripe and
rich flavors and a complete palate which shows the length,
complexity, and balance of these Red Mountain-grown grapes.
winemaker's insight
Cabernet Sauvignon grapes picked mid to late-September
based upon the brix, pH, and acidity, destemmed with minimal
crushing, dropped by gravity into 1-ton bins, cold-soaked for 48
hours, then inoculated with selected wine yeast, hand punched
down twice daily and transferred to barrels where the wine
finished both primary and secondary fermentation.
