sandy with plenty of water while the west reveals verdant hillsides, little
water and rocky soils. The western portion of the region is where most
of the winery grapes are sourced. The estate fruit, cabernet sauvignon,
cabernet franc and merlot, make up most of the reserve portfolio. Hot
days and cool nights blend with this topography to create strong tannic
structures with spot-on acidity. And apparently connoisseurs around the
world agree; wines like Isoceles, Justification, Savant, cabernet sauvignon
and syrah sell in 27 countries and across the United States.
As the only winery on the Central Coast to do so, JUSTIN has a highly
acclaimed restaurant, Deborah's Room, which offers weekend lunches
and dinner nightly. Deborah's Room employs three full-time chefs who
keep the menu perpetually fresh, with dishes like pan-seared day boat
scallops, artisanal cheese boards and duck a l'orange.
