The word "Vibrance" ("the
V") expresses what the
winemakers relish in a well-
made Cabernet Sauvignon, a wine fully alive, the product of
carefully managed fruit, harvested at ripeness, yielding tiny
berries with intense flavor and color, undiminished by the
winemaking approach. This wine opens with sensuous aromas
of black currant, violet, and cassis, with an elegant mouthfeel
of sequential notes of caramel, black cherry, pencil lead,
smoke, and a long lingering finish. Though Adams Bench
produces a lineup of impressive single vineyard Cabernets for
its fully-subscribed Collectors Club, "the V" is a favorite of the
winemakers and serves as the winery's flagship Cabernet.
winemaker's insight
Fruit grown to low tonnage per acre and hand-harvested
at ripeness enters the winemaking process that is directed
at emphasizing skin tannins while avoiding seed tannins.
Destemmed grapes are fermented as whole berries, without
crushing, in open-top stainless-steel tanks with twice-daily punch
downs during fermentation. Pressing to taste when dry, using an
upright stainless basket press, the wine undergoes malolactic
fermentation in the barrel, before being bottled unfined and
unfiltered.
