tasting notes
Characterized by a deep ruby color with substantial density, and
blackberry and black cherry fruit aromas with a slight earthiness,
fine, soft tannins belie the intensity and power of this wine. The
lingering finish has a hint of toast.
winemaker's insight
We have worked with the Syrah from Discovery Vineyard since
the first crop and have learned how to optimize the fermentation
for this exceptional fruit. Hand-picked fruit is destemmed and
crushed directly to one-ton fermenters. The crushed grapes are
allowed to cold soak for 48 hours, during which time saignée
is performed, removing 5-10 percent of the juice from the
fermenter to increase the intensity of the finished wine. After the
cold soak, the must is inoculated with yeast and punched down
4-5 times daily until approximately 8 brix, then twice daily until
press. We will typically press at 3 brix and allow the fermentation
to finish in the settling tank or in barrels. After primary
fermentation is complete, the wine is inoculated for malo-lactic
fermentation.

MATURATION: Aged 20 months in French and American oak, 25% new.
