127 THE BUNNELL FAMILY CELLAR SYRAH FROM DISCOVERY VINEYARD gourmet pairings The vibrant black fruit and depth of flavor in this powerful wine make it a natural pairing with a dry-aged ribeye steak, charred rare on the barbeque accented by a green peppercorn compound butter and earthy truffled potatoes. tasting notes Characterized by a deep ruby color with substantial density, and blackberry and black cherry fruit aromas with a slight earthiness, fine, soft tannins belie the intensity and power of this wine. The lingering finish has a hint of toast. winemaker's insight We have worked with the Syrah from Discovery Vineyard since the first crop and have learned how to optimize the fermentation for this exceptional fruit. Hand-picked fruit is destemmed and crushed directly to one-ton fermenters. The crushed grapes are allowed to cold soak for 48 hours, during which time saignée is performed, removing 5-10 percent of the juice from the fermenter to increase the intensity of the finished wine. After the cold soak, the must is inoculated with yeast and punched down 4-5 times daily until approximately 8 brix, then twice daily until press. We will typically press at 3 brix and allow the fermentation to finish in the settling tank or in barrels.
