TRÍ
gourmet pairings
Chef Aaron Tekulve of Surrell
created this smoky beef
short rib to play with the Tri's
lingering spice. Mushrooms
and cabbage in a rosemary
Worcestershire sauce take the
supporting role to pull all of
the flavors together.
tasting notes
Trí, also the Gaelic word for "three," is a blend of three classic
southern Rhône varietals. This wine features plum, espresso, and
tobacco leaf on the nose with rich notes of fig and white pepper
on the palate. It also pairs well with Manchego cheese and lamb
burgers.
winemaker's insight
The Syrah is whole cluster fermented, no destemming or
crushing, stems and all to build body and tannins without the use
of new oak. The Grenache and Mourvèdre are both destemmed
only—no crushing—to enhance the fruit of the Grenache and the
earth and spice of the Mourvèdre. All wines are aged in neutral
French oak puncheon to let the varietal characteristics shine
through.
