tasting notes
Our Sauvignon Blanc shows a beautifully distinct varietal
character with citrus notes of Meyer lemon and pink grapefruit,
perfectly complemented with hints of fresh cut grass, and
whispers of boxwood. The natural acidity is harmoniously
balanced and complements the flavors encountered on the
palate and ending with a fresh, crisp, and clean finish.
winemaker's insight
Our Sauvignon Blanc is comprised of three different Estate
vineyard blocks, each block giving the wine its own unique
character. These blocks have slightly different soil compositions
with varying amounts of calcium carbonate, and volcanic derived,
basalt rock in the sandy loam soil mixture. The wine is fermented
very slowly at cool temperatures with the average alcoholic
fermentation taking 30 to 45 days. After fermentation, the wine
remains on the lees for added mouthfeel and complexity on the
palate.
