CABERNET SAUVIGNON, RED MOUNTAIN
gourmet pairings
Coq-au-vin—chicken slowly
simmered in a rich red wine
and mushroom sauce—is a
Hedges winery favorite. This
French version of comfort
food is ideal with this
Cabernet Sauvignon.
tasting notes
Boasting a brilliant red garnet color, the Hedges Family Estate
Cabernet Sauvignon explodes with bright blackberry and cassis
notes along with leather, fresh earth, cocoa powder, cinnamon,
vanilla bean, and dried herbs, balancing perfectly with the
noticeable yet disciplined tannins. It's a tantalizing blend of
intense fruit, spice, and savory herbs that is lively with a serious
mid-palate and finish.
winemaker's insight
The fruit is sourced from Hedges, Jolet, Bel' Villa, and
Magdalena vineyards on Red Mountain. This wine is cold-soaked
overnight then inoculated with yeast and fermented for seven
to 10 days on skins while being pumped over twice daily before
pressing to barrels, where it undergoes malolactic fermentation
and aging.
