tasting notes
A Damsel Cellars signature wine, this Syrah has a purity to its
plush texture with alluring ripe blackberry and black currant
transitioning to distinct nuances of cured meat, hints of caramel,
and black pepper. Medium-bodied with a slight Old World feel,
it also pairs beautifully with soft bleu cheeses, triple cream brie,
slow-roasted pork shoulder, and herb-encrusted lamb.
winemaker's insight
The fruit is sourced from Stillwater Creek Vineyard in Royal City.
There are two clones of Syrah blended together in this wine;
one with distinct peppery aromatics and heavy spice, and the
other with a dominating fruit-forward character. The fruit is
de-stemmed, crushed and ferments ferment for approximately
seven to 10 days. The wine will remain in 25 percent new French
oak for 14 to 16 months before bottling.
