Our Shya Red Cabernet Sauvignon is intended to showcase the
characteristics of this king of grapes. Typically a bit of Merlot
and sometimes Petit Verdot will be included to add richness and
complexity to the blend. The dark crimson wine shows aromas of
black cherry and dark currant with a fascinating spice note. Fresh
and juicy dark fruit flavors are followed by round and impeccably
integrated tannins. Long and alluring, this wine is above all,
greatly balanced.
winemaker's insight
Our Shya Red Cabernet is crafted from older, nearly forgotten
vineyards, including Konnowac Vineyard, with some of the oldest
Petit Verdot and Malbec in the state, and Morrison Vineyard with
Cabernet vines dating back to 1968. We allow the vineyards to
craft the wine, and in the cellar, we guide the process through
its natural stages of fermentation. Grapes are destemmed into
small open top tanks, and fermentation occurs naturally without
chemical additions or harsh mechanical processes. A slow,
traditional basket press, used for all our red wines, yields only the
highest quality wine.
