MALBEC
gourmet pairings
Malbec-steamed mussels with
chorizo and crispy sausage
in a chimichurri sauce is a
delightful way to integrate this
wine into a dish
tasting notes
Our Malbec is sourced from the Weinbau Vineyard in the
Wahluke Slope AVA, one of the many suburb vineyards of
Sagemoor Vineyards. Malbec does well when the fruit is allowed
good exposure to the sun. Careful vertical shoot positioning give
the vines direct sunlight all morning along with a nice layer of
leaf protection later in the day once the grapes have warmed up
to ambient temperature.
winemaker's insight
Malbec ripens to a deep, dense color with broad flavor potential.
Maintaining that character is the goal of our winemaker. The
fruit is allowed to "saigner," the French word for bleed, for up
to two to three days before fermentation is started. Maintaining
a consistent, medium temperature fermentation is important to
our style.
