The Pirouette Red Wine is multi-layered with aromas and flavors
of dark fruits and hints of sweet oak, licorice, and cocoa. Flavors
gain complexity across the palate, while richly-textured, refined
tannins and a luscious mouthfeel provide a delightful finish.
winemaker's insight
A variety of fermentation processes contribute to the complexity
of this wine. Hand-harvested Cabernet berries were fermented
in 400-liter French oak barrels that were gently rolled during
fermentation. The technique gives the wine a fully-integrated oak
flavor. All other varieties in the wine were fermented in traditional
stainless steel tanks. Select lots enjoyed longer skin contact to
enhance the wine's dark color and mid-palate.
