The Ciel du Cheval Vineyard
Bordeaux Blend is a bright,
deep ruby-red blend. It
features inviting, fruit-driven aromas of raspberry, blackberry,
boysenberry, pie cherry, licorice, and minerals. Sweet, lush,
and fully-ripe flavors blend with excellent depth to the wine's
blueberry and dark chocolate flavors.
winemaker's insight
The grapes sourced for the blend are from vines that are up
to 35 years old. Whole berry fermentation is done using native
yeast after a four-day cold soak in open-top fermenters. The cap
is punched down by hand twice a day, and the must is gently
pressed into 100% French oak barrels.
