7 RED MOUNTAIN CABERNET SAUVIGNON gourmet pairings Beautifully structured with firm tannins, Columbia Winery Red Mountain Cabernet Sauvignon pairs wonderfully with pan- seared, Northwest salmon and morel mushrooms. tasting notes Columbia Winery Red Mountain Cabernet Sauvignon opens with elegant aromas of brambleberry and a hint of blueberry. On the palate, big, bold flavors of blackberry and dark cherry meld seamlessly with toasted oak, vanilla and spice. This wine is well- structured with firm tannins and a smooth, lingering finish. winemaker's insight The Red Mountain AVA produces some of the state's most intensely flavorful Cabernet Sauvignon. The vineyard site we have selected for this wine is on the western end of the mountain, with a perfect southern aspect. After harvesting, the grapes were destemmed at the winery and transferred to tanks. Fermentation occurred at 85 degrees to 90 degrees Fahrenheit in small-lot, stainless-steel tanks after a couple of days of cold soak on the skins. During fermentation, pump overs and rack and returns were used for intense extraction of color and flavor.
