7 TANNAT gourmet pairings Pair with a Northern Italian- style fennel sausage and red radicchio risotto. The Tannat cuts the rich flavors of the risotto and highlights the flavorful spices of the sausage. You can also use the Tannat to deglaze while cooking. tasting notes Seven Oxen's Tannat is bold and robust. Significant tannins are balanced by the varietal's natural spiciness, but make it a wine well-suited for aging. From the first sip this wine shows deep aromas ranging from macerated plums and cherries to dark chocolate and black licorice. With strong tannins that provide a rich texture and structure, the wine is meant to enjoy with food. winemaker's insight Tannat is most commonly used as a blending grape to provide structure and acidity. Due to the climate in Paso Robles, it's possible to push the maturity of the Tannat grape a bit further. This creates riper, softer tannins and beautiful black fruit aromas while still maintaining a bright acidity, resulting in a delicious and approachable single-varietal wine. Seven Oxen's Tannat is pressed immediately after, or sometimes before, fermentation is complete to avoid over-extraction of tannins. awarDs & DistinCtions 91 Points – Wine Enthusiast APPELLATION: Templeton Gap COMPOSITION: 100% Tannat MATURATION: Aged 18 months in new (30-50 percent) and used French oak (50-70 percent), depending on the year.
