Food, Fun and Fabulous 120 Bibb Lettuce Salad with Feta and Strawberries yield: 2-3 servings 1 head bibb lettuce, washed, cored, kept whole ¼ cup strawberries, sliced ¼ cup feta, crumbled ¼ cup almonds, sliced and toasted A refreshing choice for all occasions. We like to serve it with either champagne vinegar or lemon vinaigrette. In spring, it's nice to add edible flowers to create the look of a bouquet. 2 tablespoons lemon juice ½ teaspoon lemon zest ½ teaspoon Dijon mustard ¼ teaspoon sea salt ½ teaspoon sugar ¼ cup extra virgin olive oil In small bowl, whisk lemon juice, lemon zest, mustard, salt, and sugar until sugar is dissolved. Add olive oil in a steady stream until blended. Place lettuce in center of plate; it may tilt slightly and that is fine. Sprinkle cheese and strawberries over lettuce and on the plate, avoiding the rim. Drizzle with vinaigrette just before serving. Lemon Vinaigrette
