81 yield: 8 servings Miso Soup ½ cup dried wakame (seaweed) ¼ cup miso paste (preferably white) 6 cups dashi 3 cups hot water ½ pound soft tofu, cut into ½-inch cubes ¼ cup scallions, thinly sliced Prepare the broth with dried seaweed, miso paste, dashi, and hot water. Bring mixture to a simmer and a slow boil. Add tofu and continue cooking for 5 minutes. Garnish with scallions. A Japanese tradition and a wonderful cold-weather friend.
