Miso Soup
½ cup dried wakame (seaweed)
¼ cup miso paste (preferably white)
6 cups dashi
3 cups hot water
½ pound soft tofu, cut into ½-inch cubes
¼ cup scallions, thinly sliced
Prepare the broth with dried seaweed, miso paste,
dashi, and hot water. Bring mixture to a simmer
and a slow boil. Add tofu and continue cooking
for 5 minutes. Garnish with scallions.
A Japanese tradition and a wonderful cold-weather friend. It's
quick and easy to make and fun to serve in tiny miso soup
cups or in soup bowls with porcelain soup spoons.

1½ ounce plum sake
splash cranberry juice (optional)
splash grapefruit Juice (optional)
couple drops of Triple Sec
A fun, chilled sake drink that goes well with Asian flavors.
In an ice shaker filled with ice, add all ingredients,
shake vigorously, and strain into martini glass.
Garnish with a lime wedge.
