Cedar Plank Salmon with Soy Ginger Glaze
yield: 8-10 party-style with party rye, 4-6 dinner buffet-style
1 side fresh Atlantic salmon, pin bones out, skin off
1 cedar plank, approximately 20x6, sanded on both
sides and all edges
canola oil
2 cups soy sauce
2 tablespoons ground ginger
1 cup brown sugar
salt and pepper
In medium saucepot over medium-high heat,
combine soy sauce, ginger, and brown sugar.
Reduce mixture until thickened. Be careful not
to let mixture boil over. Preheat oven to 350
degrees. Brush the cedar plank will canola oil. Trim
salmon of any excess fat, transfer to plank, and
season with salt and pepper. Drizzle some of the
soy glaze on top, reserving some for basting. Roast
in oven for 10-15 minutes until fork tender.
Serve it hot or cold, tastes great either way. We usually present it on a wood plank served with horseradish mashed potatoes and
asparagus. Wild rice and cranberry scones also make a beautiful autumn dinner. For a simple sauce, try tarragon mayonnaise
flavored with apple butter and mirin.
