During harvest, each cluster is also picked by hand. After
fermentation in small fermenters, each wine is drained
straight from the fermenting bins—called free run—and gives
the wine a smooth palate without harsh tannins. While the
winemaking team may sometimes add a bit of lightly-pressed
wine to a vintage for fuller mouthfeel, the focus is on creating
exceptionally high-quality, free-run wine. Wine critics and fans
