tasting notes
The estate-grown Cabernet Sauvignon is made from free-run
juice. Twenty-two months in French barrels leads to aromas
of toasted marshmallow, fresh-pulled espresso, cherries, and
black tea, followed by flavors of Chukar Cherries, dark plums,
and caramel. Focused chocolaty tannins with a hint of toasted
almond make for an elegant finish.
winemaker's insight
Our winemaking starts in the vineyard where long warm and
dry summers allow plenty of time for the grapes to fully ripen
with strong sugars, and cool nights keep the acids strong for
a well-balanced fruit upon harvest. Hand-harvested clusters
are fermented in small bins. After fermentation, the free run
juice is separated before pressing. Our wines are made from
primarily free-run juice to display the full flavor of the fruit with
mild tannins. Depending on the vintage, we may blend in some
lightly-pressed wine to add depth for a fuller mouthfeel.
