tasting notes
The gorgeous, garnet color hints at the super-intense flavors of
fig, cassis, and rosemary. The bright and full entry dances on the
palate, as it sends shots of blackberry, black pepper, cinnamon,
and earthy cocoa flavors, ending with an intensely structured,
full finish. A wildly complex, savage Cabernet Sauvignon, it will
mellow on the palate over the next 10 to 20 years and seems to
constantly change with every sniff and taste.
winemaker's insight
The grapes are from the biodynamic Hedges Old Vine Vineyard
and Magdalena Vineyard. The grapes were destemmed and
partially crushed into stainless steel fermenters, where it was
allowed to begin fermenting with native yeast. It was pumped
over twice daily until desired tannin extraction was achieved. It
was then pressed to barrels where it underwent native malolactic
fermentation and aging.
