Aromas that can only be described as hedonistic invite you into
this lush wine. Mocha, spices, graphite, and ripe black fruits
build the complex and savory wine to a powerful finish. Our old
vine selection of Conner Lee Vineyard's Cabernet Sauvignon
expresses its age-worthy perfection in this wine. Dense flavors,
smooth tannins, and refreshing acidity are what fruit from this
vineyard have become known for.
winemaker's insight
Handpicked in the morning hours of early October, the Merlot
and Syrah are fermented in puncheons with free run selected
for the cuvée. Cabernet Sauvignons from 1987 and 1988 fully
ripened under the waxing October full moon. All clusters were
hand-sorted, destemmed, and resorted. Each went into its own
fermenter, where they were chilled and cold soaked for three
days to develop richness and smooth tannins. Hand-mixed daily
for two weeks on skins, only free run was selected for aging in
puncheons. The wine was stirred and aged on lees to develop
savory tones that complement the powerful fruit. After 18
months, we blended each selected puncheon and barrel for this
rare wine.
