tasting notes
2012 was the first year of full production of the Estate Vineyard.
Aromas of violet, plum, black currant and woody herbs waft
out of the glass. Greeted by blackberry on the palate, the Cab
opens to flavors of pomegranate, sage and crushed granite
all backed by nuanced tannins. The finish is laced with black
pepper and dark chocolate covered espresso beans.
winemaker's insight
Our Cut Bank Estate Vineyard sits at 1,467 feet in elevation,
high for the Walla Walla Valley. Named for the small cliff
formed by erosion as Mill Creek flows through the valley, the
vineyard is graced by gentle breezes off the Blue Mountains
bringing cooler temperatures and just enough precipitation to
enable dry-farming. Ideally situated, the southwest exposure
provides ample sunshine for slow and even ripening.
APPELLATION: Walla Walla Valley
COMPOSITION: 80% Cabernet Sauvignon, 16% Merlot, 4% Petit Verdot
MATURATION: Barrel aged 27 months in 63% new French oak, 11%
once-filled French oak and 26% neutral oak barrels.
CELLARING: Approachable upon release, aging beautifully for
15-plus years
